26 ounces no-salt-added crushed tomatoes

6 medium zucchini, cut into ½-inch rounds

1 large eggplant, peeled and cut into 1-inch cubes

1 onion, chopped

6 cloves garlic, minced or pressed

No-salt seasoning blend, adjusted to taste, or 2 tablespoons MatoZest

2 teaspoons fresh thyme, chopped, or 1 teaspoon dried

1 teaspoon fresh rosemary, chopped, or ½ teaspoon dried
